Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup strawberry jam (seedless)
- 1/4 cup powdered sugar
- 1-2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press half of the cookie dough into the prepared baking pan. Spread the strawberry jam evenly over the dough.
- Crumble the remaining cookie dough over the strawberry jam.
- Bake for 25-30 minutes, or until golden brown. Let cool completely in the pan before cutting into bars.
- In a small bowl, whisk together the powdered sugar and milk until smooth. Drizzle the glaze over the cooled bars.
Notes
For a thicker glaze, use less milk. These bars can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Feel free to use other flavors of jam to customize these bars!
