  • Total Time: 50 minutes
  • Yield: 12 bars 1x

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup strawberry jam (seedless)
  • 1/4 cup powdered sugar
  • 1-2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Press half of the cookie dough into the prepared baking pan. Spread the strawberry jam evenly over the dough.
  6. Crumble the remaining cookie dough over the strawberry jam.
  7. Bake for 25-30 minutes, or until golden brown. Let cool completely in the pan before cutting into bars.
  8. In a small bowl, whisk together the powdered sugar and milk until smooth. Drizzle the glaze over the cooled bars.

Notes

For a thicker glaze, use less milk. These bars can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Feel free to use other flavors of jam to customize these bars!
