Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/4 cup maple syrup
  • 1 egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 6 turkey sausage patties, cooked
  • 3 slices cheddar cheese, quartered

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a 6-cup muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, whisk together the maple syrup, egg, milk, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fill each muffin cup about halfway with batter. Place a cooked turkey sausage patty on top of the batter in each cup. Then put two cheddar cheese squares on top of each sausage patty.
  6. Top each muffin with the remaining batter, dividing it evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm.

Notes

For a sweeter muffin, increase the maple syrup to 1/3 cup. These muffins can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. They are also freezer-friendly; wrap individually and freeze for up to 2 months. Reheat in the microwave or oven until warmed through. You can substitute different types of cheese, like pepper jack or mozzarella, if desired.
