Ingredients
- 1 box (18.3 ounces) brownie mix
- 1/4 cup vegetable oil
- 1/4 cup water
- 2 large eggs
- 1/2 cup caramel bits
- 1/2 cup shredded coconut, toasted
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine brownie mix, vegetable oil, water, and eggs. Mix until well combined.
- Stir in caramel bits and toasted coconut. Reserve a small amount of each for topping.
- Pour batter into the prepared baking pan and spread evenly. Sprinkle the remaining caramel bits, coconut, and chocolate chips on top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely before cutting into squares.
Notes
For extra fudgy brownies, slightly underbake them. To toast coconut, spread shredded coconut on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until golden brown, stirring occasionally. Store brownies in an airtight container at room temperature for up to 3 days. You can substitute pecans or walnuts for the coconut if desired. These Samoa box mix brownies are delicious served with a scoop of vanilla ice cream.
