- 2 slices sourdough bread
- 1/2 cup ricotta cheese
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Toast the sourdough bread slices until golden brown and crispy. You can use a toaster or a skillet.
- While the bread is toasting, halve the cherry tomatoes and drizzle them with olive oil. Season with salt and pepper.
- Once the toast is ready, spread a generous layer of ricotta cheese on each slice.
- Top the ricotta cheese with the seasoned cherry tomatoes.
- Drizzle with a bit more olive oil, if desired, and serve immediately. A sprinkle of fresh basil adds a lovely touch!
Notes
For a spicier kick, add a pinch of red pepper flakes to the tomatoes. Store any leftover tomatoes separately to prevent the toast from getting soggy. To make it a more substantial meal, add a fried egg on top. The Ricotta and Tomato Sourdough Toast is best enjoyed fresh.
