  • 1/2 cup raspberry jam
  • 16 ounces mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pint fresh raspberries
  • 8 ounces semi-sweet chocolate, chopped
  • 1/2 cup heavy cream (for ganache)
  • Fresh raspberries, for garnish
  • Chocolate shavings, for garnish

Instructions

  1. In a medium bowl, whip the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  2. In a separate bowl, heat the 1/2 cup heavy cream until simmering. Pour over the chopped chocolate and let sit for 1 minute. Stir until smooth and glossy to create the chocolate ganache.
  3. Line the bottom of a 9×13 inch dish with a layer of ladyfingers. Spread a thin layer of raspberry jam over the ladyfingers.
  4. Spread half of the mascarpone mixture over the raspberry jam. Sprinkle with half of the fresh raspberries.
  5. Drizzle half of the chocolate ganache over the raspberries.
  6. Repeat layers: ladyfingers, raspberry jam, remaining mascarpone mixture, remaining raspberries, and remaining chocolate ganache.
  7. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  8. Before serving, garnish with fresh raspberries and chocolate shavings.

Notes

For a more intense raspberry flavor, use raspberry liqueur to brush the ladyfingers. You can also substitute the mascarpone cheese with cream cheese. For a richer ganache, use dark chocolate.
