Ingredients
- 1 (12-ounce) package ladyfingers
- 1/2 cup raspberry jam
- 16 ounces mascarpone cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 pint fresh raspberries
- 8 ounces semi-sweet chocolate, chopped
- 1/2 cup heavy cream (for ganache)
- Fresh raspberries, for garnish
- Chocolate shavings, for garnish
Instructions
- In a medium bowl, whip the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, heat the 1/2 cup heavy cream until simmering. Pour over the chopped chocolate and let sit for 1 minute. Stir until smooth and glossy to create the chocolate ganache.
- Line the bottom of a 9×13 inch dish with a layer of ladyfingers. Spread a thin layer of raspberry jam over the ladyfingers.
- Spread half of the mascarpone mixture over the raspberry jam. Sprinkle with half of the fresh raspberries.
- Drizzle half of the chocolate ganache over the raspberries.
- Repeat layers: ladyfingers, raspberry jam, remaining mascarpone mixture, remaining raspberries, and remaining chocolate ganache.
- Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- Before serving, garnish with fresh raspberries and chocolate shavings.
Notes
For a more intense raspberry flavor, use raspberry liqueur to brush the ladyfingers. You can also substitute the mascarpone cheese with cream cheese. For a richer ganache, use dark chocolate.
