  • 1 pound ground turkey sausage
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish and crimp the edges.
  2. In a large skillet, brown the ground turkey sausage over medium heat, breaking it apart with a spoon until fully cooked. Drain off any excess grease.
  3. Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1 minute to remove the raw flour taste.
  4. Gradually whisk in the milk, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes. Season with salt and pepper.
  5. In a separate bowl, whisk together the eggs. Slowly pour the sausage gravy into the eggs, whisking constantly to temper the eggs and prevent them from cooking.
  6. Pour the sausage gravy and egg mixture into the prepared pie crust. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the crust is golden brown. A knife inserted into the center should come out clean.
  8. Let the quiche cool for a few minutes before slicing and serving. Garnish with fresh chives, if desired.

Notes

For a richer flavor, use whole milk instead of low-fat milk. You can substitute the cheddar cheese with another cheese of your choice, such as Monterey Jack or Gruyere. Store leftover quiche in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
