Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 cup packed light brown sugar
- 1 (20 ounce) can pineapple slices, drained well and patted dry
- Maraschino cherries, halved (optional)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a small bowl, combine the melted butter and brown sugar.
- Spoon a small amount of the brown sugar mixture onto each prepared baking sheet, making circles about 2 inches in diameter.
- Place a pineapple slice on top of each brown sugar circle. If desired, place a maraschino cherry half in the center of each pineapple slice.
- Roll the sugar cookie dough into 1-inch balls. Flatten each ball slightly and place it on top of the pineapple slice.
- Bake for 10-12 minutes, or until the edges of the cookies are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before carefully inverting them onto a wire rack to cool completely.
Notes
For best results, make sure the pineapple slices are well-drained and patted dry. This will prevent the cookies from becoming soggy. You can also add a pinch of cinnamon to the brown sugar mixture for extra flavor. Store the cooled cookies in an airtight container at room temperature.
