  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1 (20 ounce) can pineapple slices, drained well and patted dry
  • Maraschino cherries, halved (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a small bowl, combine the melted butter and brown sugar.
  7. Spoon a small amount of the brown sugar mixture onto each prepared baking sheet, making circles about 2 inches in diameter.
  8. Place a pineapple slice on top of each brown sugar circle. If desired, place a maraschino cherry half in the center of each pineapple slice.
  9. Roll the sugar cookie dough into 1-inch balls. Flatten each ball slightly and place it on top of the pineapple slice.
  10. Bake for 10-12 minutes, or until the edges of the cookies are lightly golden brown.
  11. Let the cookies cool on the baking sheets for a few minutes before carefully inverting them onto a wire rack to cool completely.

Notes
