Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Approximately 24 chocolate kisses, unwrapped
- Additional granulated sugar, for rolling
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Roll the dough into 1-inch balls. Roll each ball in granulated sugar.
- Place the sugared dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Remove from oven and immediately press a chocolate kiss into the center of each cookie.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For softer cookies, slightly underbake them. Store the baked Peanut Butter Blossoms in an airtight container at room temperature for up to 3 days. You can also freeze them for longer storage. If the chocolate kisses soften too much, refrigerate the cookies for a few minutes to firm them up. Try using different flavors of chocolate kisses for a fun twist!
