Instructions
- Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal. This will prevent sticking and make cutting a breeze later.
- In a large microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave on high for 30-60 seconds, or until the mixture is warm and easily stirrable. Alternatively, heat in a small saucepan over low heat until smooth and combined.
- Remove the mixture from the heat (or microwave) and stir in the vanilla extract and sea salt until well incorporated. The aroma will be incredible!
- Add the rolled oats and optional chia seeds to the peanut butter mixture. Stir vigorously with a sturdy spoon or spatula until the oats are evenly coated and everything is thoroughly combined. The mixture will be quite thick.

- Transfer the mixture to the prepared baking dish. Using the back of a spoon or your hands (lightly moistened to prevent sticking), press the mixture firmly and evenly into the pan. Ensure it's packed down well to help the sticks hold their shape.
- Cover the dish loosely with plastic wrap and refrigerate for at least 1 hour, or until firm. This chilling time is crucial for the chew sticks to set properly.
