Ingredients
- 1.5 lbs ground beef
- 1 cup cooked macaroni pasta
- 2 cups shredded cheddar cheese, divided
- 1 cup milk
- 1/2 cup bread crumbs
- 1 egg, beaten
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 1/4 tsp nutmeg
- Salt and pepper to taste
- Optional: Breadcrumbs for topping
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, combine ground beef, 1/2 cup cheddar cheese, 1/2 cup milk, bread crumbs, egg, onion, garlic, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well and form into a loaf shape.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in 2 cups of milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and simmer for 5 minutes, or until slightly thickened.
- Remove from heat and stir in the remaining 1.5 cups of cheddar cheese, nutmeg, salt, and pepper until melted and smooth.
- Stir in the cooked macaroni pasta into the cheese sauce.
- Pour the mac and cheese into the prepared baking dish. Place the meatloaf on top of the mac and cheese.
- Optional: Sprinkle breadcrumbs over the meatloaf and mac and cheese for added texture.
- Bake for 40 minutes, or until the meatloaf is cooked through and the mac and cheese is bubbly and golden brown.
- Let cool for a few minutes before serving. Enjoy!
Notes
For a spicier kick, add a pinch of cayenne pepper to the cheese sauce. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave. You can substitute ground turkey or chicken for the ground beef. For a richer flavor, use a blend of cheeses in the mac and cheese. Consider adding some hot sauce or green chilies for extra flavor.
