  • 1 cup cooked macaroni pasta
  • 2 cups shredded cheddar cheese, divided

  • 1 egg, beaten
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Optional: Breadcrumbs for topping

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine ground beef, 1/2 cup cheddar cheese, 1/2 cup milk, bread crumbs, egg, onion, garlic, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well and form into a loaf shape.
  3. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in 2 cups of milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and simmer for 5 minutes, or until slightly thickened.
  4. Remove from heat and stir in the remaining 1.5 cups of cheddar cheese, nutmeg, salt, and pepper until melted and smooth.
  5. Stir in the cooked macaroni pasta into the cheese sauce.
  6. Pour the mac and cheese into the prepared baking dish. Place the meatloaf on top of the mac and cheese.
  7. Optional: Sprinkle breadcrumbs over the meatloaf and mac and cheese for added texture.
  8. Bake for 40 minutes, or until the meatloaf is cooked through and the mac and cheese is bubbly and golden brown.
