Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup (1 stick) unsalted butter, melted
- ¼ cup granulated sugar
- 2 (14 ounce) cans sweetened condensed milk
- ½ cup key lime juice (freshly squeezed is best)
- 1 teaspoon key lime zest
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of the prepared pan to form a crust.
- Bake the crust for 10 minutes. Remove from oven and let cool slightly.
- In a large bowl, whisk together sweetened condensed milk, key lime juice, and key lime zest until smooth and well combined.
- Pour the key lime mixture over the partially baked crust, spreading evenly.
- Bake for 15-20 minutes, or until the filling is set but still slightly jiggly. The edges should be lightly golden.
- Let the bars cool completely in the pan on a wire rack. Then, refrigerate for at least 2 hours before cutting into squares. Dust with powdered sugar before serving, if desired.
Notes
For a stronger key lime flavor, use more key lime zest. Store leftover bars in an airtight container in the refrigerator for up to 5 days. You can also freeze these bars for up to 2 months. Let them thaw completely in the refrigerator before serving.
