  • 1 ½ cups graham cracker crumbs
  • ½ cup (1 stick) unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 (14 ounce) cans sweetened condensed milk
  • ½ cup key lime juice (freshly squeezed is best)
  • 1 teaspoon key lime zest
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of the prepared pan to form a crust.
  3. Bake the crust for 10 minutes. Remove from oven and let cool slightly.
  4. In a large bowl, whisk together sweetened condensed milk, key lime juice, and key lime zest until smooth and well combined.
  5. Pour the key lime mixture over the partially baked crust, spreading evenly.
  6. Bake for 15-20 minutes, or until the filling is set but still slightly jiggly. The edges should be lightly golden.
  7. Let the bars cool completely in the pan on a wire rack. Then, refrigerate for at least 2 hours before cutting into squares. Dust with powdered sugar before serving, if desired.

Notes

For a stronger key lime flavor, use more key lime zest. Store leftover bars in an airtight container in the refrigerator for up to 5 days. You can also freeze these bars for up to 2 months. Let them thaw completely in the refrigerator before serving.
