Ingredients
- 8 ounces cooked corned beef, thinly sliced
- 1 cup sauerkraut, drained and squeezed dry
- 4 ounces Swiss cheese, shredded
- 1/4 cup mayonnaise
- 2 tablespoons sugar-free ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 6 large keto-friendly tortillas or wraps
- 2 tablespoons melted butter or olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the mayonnaise, sugar-free ketchup, Dijon mustard, and Worcestershire sauce to make the sauce. Mix well and set aside.
- Lay the keto-friendly tortillas flat on a clean surface. Spread a thin layer of the sauce evenly over each tortilla.
- Divide the corned beef, sauerkraut, and Swiss cheese evenly among the tortillas, placing them on top of the sauce. Distribute evenly, leaving a small border at the edges.
- Tightly roll up each tortilla, starting from one end. Secure with toothpicks if needed.
- Brush the tops of the roll-ups with melted butter or olive oil. Sprinkle with salt and pepper.
- Place the roll-ups on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before slicing each roll-up into bite-sized pieces. Serve warm with extra sauce on the side, if desired.
Notes
For extra crispiness, place the roll-ups under the broiler for a minute or two after baking, watching carefully to prevent burning. You can substitute turkey or beef for the corned beef. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
