Ingredients

  • 1 pound thinly sliced beef steak (such as sirloin or ribeye)
  • 1 tablespoon olive oil
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 4 ounces sliced mushrooms
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup provolone cheese, shredded
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 6 large romaine lettuce leaves (for wrapping)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and cook until browned, about 5-7 minutes. Season with salt, pepper, garlic powder, and onion powder.
  3. Add the sliced bell peppers, onion, and mushrooms to the skillet. Cook until the vegetables are softened, about 8-10 minutes.
  4. Remove the skillet from heat and stir in the softened cream cheese until well combined. Then, stir in 1/2 cup of the mozzarella cheese and 1/4 cup of the provolone cheese.
  5. Lay out the romaine lettuce leaves. Spoon the beef and vegetable mixture onto each lettuce leaf. Sprinkle the remaining mozzarella and provolone cheese on top.
  6. Carefully roll up each lettuce leaf to form a roll up. Place the roll ups seam-side down on the prepared baking sheet.
  7. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Let cool slightly before serving. Garnish with extra cheese or your favorite toppings, if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the beef and vegetable mixture. Store leftover roll ups in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving. You can also use other types of lettuce for wrapping, such as butter lettuce or iceberg lettuce.
