Ingredients
- 1 large red onion, thinly sliced
- 1 cup apple cider vinegar
- 1/2 cup water
- 1/4 cup honey
- 1 tablespoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black peppercorns
Instructions
- Prepare the onions: Thinly slice the red onion and place it in a heat-safe jar or container.
- Make the pickling brine: In a saucepan, combine the apple cider vinegar, water, honey, red pepper flakes, salt, and black peppercorns.
- Bring to a boil: Heat the mixture over medium heat, stirring until the honey and salt dissolve. Bring to a gentle boil.
- Pour over onions: Carefully pour the hot brine over the sliced red onions in the jar, making sure to cover them completely.
- Cool and store: Let the onions cool to room temperature. Then, cover the jar and refrigerate for at least 30 minutes before serving. The flavor will deepen as they sit.
Notes
For a milder flavor, reduce the amount of red pepper flakes. Store pickled onions in the refrigerator for up to 2 weeks.
