Ingredients
- 20 ounces frozen shredded hash browns, thawed
- 2 tablespoons olive oil, divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese, divided
- 6 large eggs
- 1/4 cup milk
- 1/4 teaspoon garlic powder
- 1/2 cup cooked beef sausage, crumbled
- 1/2 cup bell peppers, diced (any color)
- 1/4 cup onion, diced
- Optional toppings: fresh parsley, hot sauce
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, combine thawed hash browns, 1 tablespoon olive oil, salt, and pepper. Mix well.
- Press the hash brown mixture evenly onto a pizza pan or baking sheet to form a crust. Bake for 20 minutes, or until golden brown and crispy.
- While the crust is baking, whisk together eggs, milk, garlic powder, salt, and pepper in a bowl. Scramble the eggs in a skillet with remaining 1 tablespoon olive oil until cooked through.
- Remove the hash brown crust from the oven. Sprinkle 1/2 cup of cheddar cheese evenly over the crust.
- Top with scrambled eggs, crumbled beef sausage, diced bell peppers, and diced onion. Sprinkle remaining 1/2 cup cheddar cheese over the toppings.
- Return the pizza to the oven and bake for 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve immediately. Add hot sauce for extra flavor, if desired.
Notes
For a vegetarian option, omit the beef sausage and add more vegetables. You can also customize the toppings with your favorite breakfast ingredients, such as spinach, mushrooms, or tomatoes. The hash brown crust can be made ahead of time and stored in the refrigerator for up to 24 hours. Leftovers can be stored in the refrigerator for up to 3 days.
