These French Dip Tortilla Roll Ups are a delightful twist on the classic sandwich! Tender shaved beef and melty provolone cheese are rolled up in warm tortillas, then baked until golden brown and crispy. Served with a savory beef broth dipping sauce, these roll ups are perfect for a quick lunch, appetizer, or snack. The perfect combination of savory flavors and satisfying textures makes this a guaranteed crowd-pleaser.

  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 6 large flour tortillas
  • 1 pound shaved beef (such as roast beef or sliced deli beef)
  • 6 slices provolone cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • Optional: chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a medium bowl, combine shaved beef, olive oil, garlic powder, onion powder, and black pepper. Toss to combine.
  3. Lay each tortilla flat. Divide the beef mixture evenly among the tortillas, spreading it over the surface. Top each with a slice of provolone cheese.
  4. Tightly roll up each tortilla and place seam-side down on the prepared baking sheet.
  5. Bake for 12-15 minutes, or until the tortillas are golden brown and crispy, and the cheese is melted and bubbly.
  6. While the roll-ups are baking, heat the beef broth in a saucepan over medium heat until warmed through.
  7. Remove roll-ups from the oven and let cool slightly. Slice each roll-up into 2-3 pieces. Garnish with chopped parsley, if desired. Serve immediately with warm beef broth for dipping.

Notes

For extra flavor, try using a flavored provolone like smoked provolone or garlic provolone. You can also add a thin layer of horseradish sauce or Dijon mustard to the tortillas before adding the beef and cheese. Leftovers can be stored in the refrigerator for up to 2 days. Reheat in the oven or microwave.
