Ingredients
- 6 large flour tortillas
- 1 pound shaved beef (such as roast beef or sliced deli beef)
- 6 slices provolone cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 2 cups beef broth
- Optional: chopped fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
- In a medium bowl, combine shaved beef, olive oil, garlic powder, onion powder, and black pepper. Toss to combine.
- Lay each tortilla flat. Divide the beef mixture evenly among the tortillas, spreading it over the surface. Top each with a slice of provolone cheese.
- Tightly roll up each tortilla and place seam-side down on the prepared baking sheet.
- Bake for 12-15 minutes, or until the tortillas are golden brown and crispy, and the cheese is melted and bubbly.
- While the roll-ups are baking, heat the beef broth in a saucepan over medium heat until warmed through.
- Remove roll-ups from the oven and let cool slightly. Slice each roll-up into 2-3 pieces. Garnish with chopped parsley, if desired. Serve immediately with warm beef broth for dipping.
Notes
For extra flavor, try using a flavored provolone like smoked provolone or garlic provolone. You can also add a thin layer of horseradish sauce or Dijon mustard to the tortillas before adding the beef and cheese. Leftovers can be stored in the refrigerator for up to 2 days. Reheat in the oven or microwave.
