Ingredients
- 1 cup low-fat cottage cheese
- 1/2 cup marinara sauce
- 1/4 cup chopped bell peppers (any color)
- 1/4 cup sliced mushrooms
- 2 tablespoons chopped red onion
- 1/4 cup turkey pepperoni slices
- 1/4 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Pinch of red pepper flakes (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In an oven-safe bowl or ramekin, spread the cottage cheese evenly on the bottom.
- Pour the marinara sauce over the cottage cheese.
- Top with bell peppers, mushrooms, red onion, and turkey pepperoni.
- Sprinkle with mozzarella cheese and Italian seasoning.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
- If desired, sprinkle with red pepper flakes before serving. Let cool slightly before enjoying.
Notes
Feel free to add other pizza toppings such as black olives, spinach, or sausage crumbles. For a spicier kick, add a dash of hot sauce. You can also broil for the last minute for extra browning.
