Ingredients
- 6 cups Rice Krispies cereal
- 10 ounces marshmallows
- 4 tablespoons unsalted butter
- 1/2 cup sweetened shredded coconut
- 1/4 cup unsweetened shredded coconut, toasted
- 1 teaspoon coconut extract
- Pinch of salt
Instructions
- In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted and smooth.
- Remove from heat and stir in coconut extract and salt.
- Add Rice Krispies cereal and sweetened shredded coconut to the marshmallow mixture. Gently fold until well coated.
- Transfer the mixture to a greased 9×13 inch baking dish. Gently press down to create an even layer.
- Sprinkle the toasted unsweetened shredded coconut over the top. Let cool completely before cutting into squares.
Notes
For easier cutting, grease your knife or use a pizza cutter. Store the Rice Krispy treats in an airtight container at room temperature for up to 3 days. For a richer coconut flavor, use coconut oil instead of butter. You can also add a drizzle of melted white chocolate on top for extra decadence.
