  • 2 large eggs
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup fresh lime juice (about 4-5 limes)
  • 1/4 cup unsweetened shredded coconut
  • 1 teaspoon lime zest
  • 1/2 teaspoon coconut extract
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, whisk together flour, powdered sugar, and salt. Cut in the softened butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared pan to create the crust.
  3. Bake the crust for 15 minutes, or until lightly golden.
  4. While the crust is baking, prepare the filling. In a large bowl, whisk together eggs, sweetened condensed milk, lime juice, shredded coconut, lime zest, and coconut extract until smooth.

Notes

For a stronger lime flavor, add more lime zest. These bars can be stored in the refrigerator for up to 5 days. You can also freeze them for up to 2 months; thaw in the refrigerator before serving. If you don’t have coconut extract, you can omit it or substitute with vanilla extract. Make sure to use fresh lime juice for the best flavor.
