Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 large egg
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- 1 medium apple, peeled, cored, and diced
- Vegetable oil, for frying
- For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the milk, egg, sugar, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced apple.
- Heat about 2 inches of vegetable oil in a deep pot or skillet to 350°F (175°C). Drop spoonfuls of the apple mixture into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the fritter bites from the oil and place them on a wire rack lined with paper towels to drain excess oil.
- While the fritter bites are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, cinnamon, and vanilla extract until smooth and creamy. Add more milk, one teaspoon at a time, if needed to reach your desired consistency.
- Dip the cooled apple fritter bites into the glaze, coating them evenly. Place them back on the wire rack to allow the glaze to set for a few minutes before serving. Enjoy!
Notes
For best results, use a firm apple variety like Honeycrisp or Granny Smith. You can also add a pinch of cardamom to the batter for extra warmth. These are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days. To reheat, warm them in the oven at 300°F for a few minutes. If the glaze is too thick, add a tiny bit more milk. If the glaze is too runny, add a bit more powdered sugar.
