  • 1 medium apple, peeled, cored, and diced

  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together the milk, egg, sugar, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced apple.
  3. Heat about 2 inches of vegetable oil in a deep pot or skillet to 350°F (175°C). Drop spoonfuls of the apple mixture into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through.
  4. Remove the fritter bites from the oil and place them on a wire rack lined with paper towels to drain excess oil.
  5. While the fritter bites are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, cinnamon, and vanilla extract until smooth and creamy. Add more milk, one teaspoon at a time, if needed to reach your desired consistency.
