- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

- 1 teaspoon ground cinnamon

- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 cup buttermilk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced
- Vegetable oil, for frying
- For the Glaze:
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add the granulated sugar and brown sugar and whisk to combine.
- In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
- Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the oil and place them on a wire rack lined with paper towels to drain.
- While the fritters are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar, milk, vanilla extract, and cinnamon until smooth.
- Dip the warm fritters into the glaze, coating them evenly. Place them back on the wire rack to allow the glaze to set slightly. Serve immediately and enjoy!
Notes
For best results, use a thermometer to ensure the oil is at the correct temperature. If the oil is too hot, the fritters will burn on the outside before they are cooked through on the inside. Store leftover fritters in an airtight container at room temperature for up to 2 days. You can reheat them in the oven or microwave, but they are best enjoyed fresh. For a richer flavor, try using brown butter in the batter. You can also add a splash of apple cider vinegar to the glaze for a tangy twist. Substitute the apples for pears for variety.
