Ingredients
- 1 lb cooked chicken breast, shredded or diced (rotisserie chicken works great!)
- 8 slices turkey bacon, cooked until crispy and crumbled
- 1/2 cup ranch dressing (good quality)
- 1/4 cup mayonnaise (optional, for extra creaminess)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped celery (for crunch)
- 1/4 cup finely chopped fresh parsley
- Salt and freshly ground black pepper to taste
- 4 sub rolls, hoagie buns, or ciabatta rolls, split
- Optional: Leaf lettuce, sliced tomatoes for serving
Instructions
- Cook the turkey bacon in a skillet over medium heat until it's very crispy. Drain on paper towels, then crumble once cooled.
- In a large mixing bowl, combine the shredded or diced cooked chicken, crumbled crispy turkey bacon, shredded cheddar cheese, finely chopped red onion, finely chopped celery, and fresh parsley.
- Add the ranch dressing and mayonnaise (if using) to the chicken mixture. Stir everything together thoroughly until all ingredients are evenly coated. Season with salt and freshly ground black pepper to taste.
- Lightly toast the split sub rolls or ciabatta buns. This can be done in a dry skillet, under the broiler, or in a toaster oven, just until golden and warm.
- Generously spoon the chopped chicken mixture onto the toasted rolls. If desired, add a layer of fresh leaf lettuce and sliced tomatoes before or after the chicken mixture for added freshness.
- Serve your ultimate chopped chicken ranch sandwich immediately and savor every delicious bite!
Notes
For an extra kick, add a pinch of cayenne pepper or a dash of hot sauce to the mixture. This sandwich is best served fresh, but the chicken mixture can be prepared up to 2 days in advance and stored in an airtight container in the refrigerator. Just assemble the sandwiches right before serving. You can also swap cheddar for provolone or a Monterey Jack for a different cheese profile. For a lighter version, serve the mixture in crisp lettuce cups instead of bread.
