  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream, divided
  • 8 ounces semi-sweet chocolate chips

Instructions

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch pie plate to form the crust. Chill in the refrigerator for at least 30 minutes.
  2. In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the peanut butter and vanilla extract and beat until well combined.
  3. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture.
  4. Pour half of the peanut butter mixture into the chilled graham cracker crust. Melt the chocolate chips and remaining 1/2 cup of heavy cream in a microwave-safe bowl in 30-second intervals, stirring until smooth. This will be the chocolate ganache.
