Ingredients
- 2 lbs ground chicken
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 4 cloves garlic, minced
- 1 large egg, lightly beaten
- 1/4 cup milk
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese (for topping)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×5 inch loaf pan.
- In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, parsley, minced garlic, egg, milk, olive oil, oregano, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Transfer the chicken mixture to the prepared loaf pan and press down firmly to create an even surface.
- Bake for 45 minutes. Then, remove from oven and sprinkle shredded mozzarella cheese evenly over the top.
- Return the loaf pan to the oven and bake for an additional 5 minutes, or until the mozzarella cheese is melted and golden brown. Let the chicken loaf rest for 10 minutes before slicing and serving.
Notes
For a richer flavor, use a blend of Parmesan and Asiago cheeses. You can also add a pinch of red pepper flakes for a little heat. Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve with a side of roasted vegetables or a simple salad.
