  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 lbs ground chicken
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×5 inch loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, parsley, minced garlic, egg, milk, olive oil, oregano, salt, and pepper. Mix well until all ingredients are evenly distributed.
  3. Transfer the chicken mixture to the prepared loaf pan and press down firmly to create an even surface.
  4. Bake for 45 minutes. Then, remove from oven and sprinkle shredded mozzarella cheese evenly over the top.
  5. Return the loaf pan to the oven and bake for an additional 5 minutes, or until the mozzarella cheese is melted and golden brown. Let the chicken loaf rest for 10 minutes before slicing and serving.

Notes

For a richer flavor, use a blend of Parmesan and Asiago cheeses. You can also add a pinch of red pepper flakes for a little heat. Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve with a side of roasted vegetables or a simple salad.
