Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (21 oz) can cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, combine the cake mix and melted butter. Mix until a crumbly mixture forms. Press the mixture into the bottom of the prepared pan to create the crust.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust. Spread evenly.
  5. Spoon the cherry pie filling over the cream cheese layer, spreading it evenly across the surface.
  6. Bake for 30-35 minutes, or until the cheesecake layer is set and the edges are lightly golden. Let cool completely in the pan before cutting into bars.

Notes

For best results, chill the bars in the refrigerator for at least 2 hours before serving. This allows the cheesecake to fully set and the flavors to meld together.
