Ingredients
- 4 (6-ounce) salmon fillets, skin on or off
- 4 ounces Boursin cheese, softened
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon fillets on the prepared baking sheet. Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Spread softened Boursin cheese evenly over the top of each salmon fillet.
- Bake for 20-25 minutes, or until salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley and serve immediately.
Notes
For extra flavor, add a pinch of red pepper flakes to the Boursin cheese before spreading it on the salmon. Store leftover baked Boursin salmon in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave. Serve with a side of roasted asparagus, rice pilaf, or a simple green salad.
