Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
- In a medium bowl, combine diced apples, cinnamon, nutmeg, and granulated sugar. Set aside.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, whisk together milk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the apple mixture.
- Drop spoonfuls of batter onto the prepared baking sheet. Aim for roughly 3-inch diameter fritters.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- While the fritters are baking, prepare the glaze. In a small bowl, whisk together powdered sugar, milk (starting with 2 tablespoons), and vanilla extract until smooth. Add more milk, 1 teaspoon at a time, until desired consistency is reached.
- Let the fritters cool slightly on the baking sheet before transferring them to a wire rack. Drizzle generously with the vanilla glaze while still warm.
- Serve immediately and enjoy!
