Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup whole milk
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 2 large Granny Smith apples, peeled, cored, and finely diced
  • Vegetable oil, for frying
  • 2 cups powdered sugar (for glaze)
  • 1/4 cup milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  2. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the finely diced apples, being careful not to overmix the batter.
  4. Heat about 2 inches of vegetable oil in a dutch oven or deep skillet to 350°F (175°C). Use a candy thermometer to ensure the temperature is accurate.
  5. Drop tablespoon-sized scoops of batter into the hot oil, frying about 5-6 at a time to avoid overcrowding. Fry for 2-3 minutes per side until deep golden brown and cooked through.
  6. Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil slightly.
  7. While the fritters cool slightly, whisk together the powdered sugar, milk, and vanilla in a small bowl to make the glaze. Dip each warm fritter into the glaze, turning to coat, then set on a wire rack to set.

Notes

Ensure your oil stays at a steady 350°F; if it’s too hot, the outside will burn before the inside is cooked. If the glaze is too thick, add a teaspoon more milk. Best enjoyed fresh on the same day.
