- 1 teaspoon pure vanilla extract
- 2 large Granny Smith apples, peeled, cored, and finely diced
- Vegetable oil, for frying
- 2 cups powdered sugar (for glaze)
- 1/4 cup milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
- In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the finely diced apples, being careful not to overmix the batter.
- Heat about 2 inches of vegetable oil in a dutch oven or deep skillet to 350°F (175°C). Use a candy thermometer to ensure the temperature is accurate.
- Drop tablespoon-sized scoops of batter into the hot oil, frying about 5-6 at a time to avoid overcrowding. Fry for 2-3 minutes per side until deep golden brown and cooked through.
- Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil slightly.
- While the fritters cool slightly, whisk together the powdered sugar, milk, and vanilla in a small bowl to make the glaze. Dip each warm fritter into the glaze, turning to coat, then set on a wire rack to set.
Notes
Ensure your oil stays at a steady 350°F; if it’s too hot, the outside will burn before the inside is cooked. If the glaze is too thick, add a teaspoon more milk. Best enjoyed fresh on the same day.
