  • 1 pound ground beef (optional, can omit for vegetarian version)
  • 1/4 cup dry red grape juice vinegar (added after simmering for flavor depth)

Instructions

  1. In a large, heavy-bottomed pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute, until fragrant. Be careful not to burn the garlic.
  3. If using ground beef, add it to the pot and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
